If you bought it digitally I'm not sure if there's anything you can do. If the latest patch is part of the game file then it will all download and install together. If not then I suppose you could delete the game, redownload it and pause the update download.

PSN: nyamukgatal. TC bear in mind that some games won't let you use a save that's been made from a later patch with an earlier version of the game. For instance if I went and uninstalled the Witcher 3 and then reinstalled it in order to play with no patches my existing saves wouldn't work since they're all post-patch saves. I would have to start a new game.
